Description

Erythritol is often used as a replacement for table sugar in low-calorie and low-sugar products. It’s also included as an ingredient to “bulk up” some other artificial sweeteners. Sugar alcohols, such as powdered erythritol, are popular low-calorie sugar substitutes that are well tolerated in low doses. No bulking ingredients, like cornstarch, or extra chemicals added. Companies do sensory evaluation tests and add all sorts of unnecessary chemicals to improve texture, smell and visual acceptance by the consumers. Sugar alcohols aren’t as sweet as sugar. Artificial sugars like aspartame (Equal®) and saccharine (Sweet and Low®), on the other hand, can be up to 700 times sweeter than sugar. These sources produce erythritol more economically, which is first converted into a sugar (glucose or fructose) and then to erythritol through fermentation.

Rather than chasing the perfect sugar substitute, it is best to minimize added sugars in our diet and reprogram a sweet tooth through other means. In contrast to stevia, monk fruit extract has less bitter aftertaste. This makes it a goodchoice for people sensitive to the aftertaste of stevia.

Can You Blend Erythritol?

While not a huge deal, erythritol does have the most noticeable cooling effect of any of all sugar alcohols. Fortunately, powdering the granules seems to help alleviate some of this cooling. DOES ERYTHRITOL IMPACT BLOOD SUGAR? But why, you may be asking yourself, should I make my own when there are so many options of ready blended 1:1 keto baking sweeteners available for sale? I will give you 2 reasons: 1. You can control your ingredients: For more information about erythritols cooling effect, read on below. THE COOLING EFFECT OF ERYTHRITOL Erythritol is a magical keto sugar: it’s a sugar alcohol that you don’t need to count the carbs for. Erythritol net carbs = ZERO If you are pursuing a carbohydrate-limited way of eating, such as ketogenic or low-carb, spikes in blood sugar levels are not what you are looking for.

Promising studies show that test subjects, after consuming allulose, had lower blood glucose levels [ *, *]. Naturally occurring erythritol is found in certain fruit, mushrooms, and fermented foods, although in very little amounts. Due to its minuscule quantity, none of its natural form is used to produce the store-bought variety. Calories – Even though honey, maple syrup, and agave are healthy sweeteners compared to table sugar, they are still high in calories: 60 for honey, 52 for maple syrup, and 62 for agave — and that’s in just one tablespoon [ *, *, *]. DiNicolantonio JJ, O’Keefe JH. Added sugars drive insulin resistance, hyperinsulinemia, hypertension, type 2 diabetes and coronary heart disease. Mo Med. 2022;119(6):519-523. PMID:36588634 As a sweetener, erythritol, monk fruit, and xylitol are all readily available. Simply blend or grind it until fluffy before serving it in your own powdered version. To get all of the powder into the bottom, gently tap the grinder against the countertop before opening. You can learn about what the most common keto-friendly sweeteners are and how they work in baking in my Sugar Substitutes post, which is why I recommend reading that first. But below are specific comparisons people ask about the most. All of them are keto friendly, but there are differences in their sweetness and baking properties. Erythritol vs. Stevia
