Over the years, my family has created a tradition centered around making homemade pastaon Christmas day. One of our most memorable Christmases was right after we moved into our new house. The whole crew climbed into our best holiday cozies, donned aprons and made ravioli using my Gram's homemade ravioli dough recipe. Making homemade ravioli can be a little labor intensive but it's absolutely worth it, silky buttery fresh pasta filled with an incredible filling and tossed in a beautiful sauce.

However, terms like wraps and dumplings are never enough to describe ravioli. There’s a genuine reason they are called “pillows of perfection”! The one problem with using a pastry cutter instead of a ravioli cutter is that, depending on the type of pastry cutters you own, you may not get the standard rectangular ravioli pieces. They will happily sit out on your bench loosely covered with plastic wrap for up to an hour. Any longer than that the edges will start to dry out and harden and they won't re-hydrate in the water. If cooking the day (or week or month) after I would highly recommend using my storage guide and freezing.

Tips on Choosing the Best Sauce It shouldn't be too rough - just like the filling shouldn't be too wet it also shouldn't be too rough. A rough filling could puncture the pasta which would be a disaster when you boil them. The filling will seep out or too much water will get in making the ravioli tasteless.
