I started Bad Girl Bakery because I love to bake. I’m definitely more of a cake baker than a sourdough baker. While I understand the science of baking (I can laminate with the best of them!) that’s not what interests me. The cakes we bake are far closer to home baking than multi-step process baking. That’s what we bake in our bakeries and that’s what I want to share here. Our approach to savoury food is exactly the same. Great ingredients and no fuss recipes with hints and tips for maximum flavour. Divide the batter equally between the muffin wraps with an ice cream scoop if you have one (or a spoon if you don’t), scraping down the bowl so you get every last drop. The wraps will look very full. Remember the bowl or pan you melted the butter in? Weigh the remaining 20g oats straight into it and give them a mix so they soak up the butter on the sides.

Some of the recipes here have been updated and changed, but I’ve left them here anyway. We will post more over time. Our Cakes When I first started Bad Girl, layer cakes were not a big thing, so they seemed to attract the most attention. I love making them, as the are actually pretty straightforward to make and decorate but look really impressive. The best layer cake tip I can give is to first do a crumb coat. It’s a thin layer of buttercream that you put on your layer, then chill before you put your final layer on. It means all the crumbs are trapped and won’t end up in your buttercream. Jeni said: “To be honest with you, when Emily Dewhurst at Kitchen Press approached us and asked if we wanted to write a book with her, we were blown away. But you just keep stirring it for a bit longer and it turns into this silk-smooth, beautiful chocolatey mixture – and, I have to say, that moment gets me every time!” She explains, "it is a huge agricultural show, and normally it is incredibly difficult to get a stall."Yes, very much. My oldest sister always hosts family Christmas and before I moved up to the Highlands that is where I would spend it. She is a fantastic cook and does beautiful Christmas spreads and makes it all look effortless. It is very encouraging that they are keen to expand and invest within Inverness city centre with their well-established and already popular business.” The award-winning businesses has been built up by Douglas Hardie and Jeni Iannetta who have developed an outlet in Inverness within the Victorian Market. Some books take up residence in your home, others in your heart, and Bad Girl Bakery most vehemently belongs in the latter category. I love everything about this book: its warmth, its down-to-earth voice, and its heavenly recipes. It’s a very real joy, and what a pleasure and honour it is to share it with you. As befits the times, vegans and people who eat gluten-free, will find recipes for them in the book, as they would from the shop.

Probably beef with all the trimmings – pigs in blankets and roast potatoes. We are quite traditional at Christmas.

I still feel that flutter of joy. Even as far into my career as I am, I can't believe I get to bake cakes for a living and people buy them. The bakery’s debut cookbook, from independent Edinburgh-based publisher Kitchen Press, promises to be the icing on the cake for the thriving young business. Pudding? That is tough. I haven't decided yet. It will generally be something chocolatey. I am not big on Christmas pudding. Jeni originally comes from Kirkton area in Dundee, but with a surname name like Iannetta it's no surprise that she has Italian heritage, "we didn't get much Italian glamour, we are definitely Dundonian," she said.They won the best stall, and Jeni explains how she prepared, saying: "I'd baked more cake than she had ever baked, but sold out on the preview evening so I went home and baked all night for the next day. When it comes to asking what Jeni’s own favourite thing to make is, she wails a little bit at having to choose – understandably with all these delicious recipes at her fingertips.
