Yes, you can keep your hollandaise sauce warm, and it’s the best way to serve and enjoy this sauce. But, of course, the best thing to do is only make your hollandaise right before you eat. This way, you can ensure that the sauce remains warm and freshly made.

You want to use a pan with a heavy fitting lid to ensure the sauce doesn't dry out too much.
