This dried product is excellent to use if you find yourself weary about consuming raw egg whites in some baked treats. Let’s learn more about what goes into meringue powder and common ways on how to use it. What is meringue powder?
To give your royal icing an extra shiny coating and a nice soft bite, you can add a touch of corn syrup. This is a completely optional step, so if you do not have corn syrup, do not stress on this. Follow the same instructions as I have explained above, however, after you add the initial ¼ cup of water and mix, add in 2 teaspoon of corn syrup (and 1 teaspoon of clear vanilla extract if you would like some flavoring). Continue to follow the instructions from there and you will have royal icing with a soft bite and nice shine when it dries! Mixing Color into Royal Icing There are a few downsides to meringue powder. Not all additives completely dissolve in water. So you may get a slightly grainy texture. On top of that, it doesn’t create billowy and robust foam compared to using fresh egg whites as the drying process weakens its bonding and foaming capability.
Prepared as is, our royal icing recipe will result in stiff consistency icing. If you need stiffer icing, prepare the royal icing recipe with 1 tablespoon less water. In my recipe, I typically use approximately ½ tablespoon of Meringue powder per 1 cup of powdered sugar.These seeds contain mucilaginous substances in their outer layer which swells when exposed to liquid and forms a gel-like texture. If you want to use flax seeds as a substitute for meringue powder ground 1 tablespoon flax seeds and add 3 tablespoons of water. The best substitutes for meringue powder in royal icing include fresh egg whites. Or egg white powder mixed with confectioners’ sugar and lemon juice. Can I use cornstarch instead of meringue powder? For my experiment, I created four mini cakes and frosted them each with different frostings using my favorite vanilla buttercream recipe as a base: Meringue powder consists of dried egg whites and is used in many recipes as a substitute for fresh egg whites.
